	This crustacean species, found in sizes from 60 grams to 350+ grams is renowned for its flavour and texture, often described as superior to lobster meat. This species is rapidly finding favour in local and overseas markets where it is replacing much higher priced lobster species. This product is caught as a bycatch of prawn trawling and is subject to minimum sizes.
